Quinoa is referred to as an ‘ancient grain’ as it is believed to have been consumed by humans up to 7000 years ago.
Quinoa is one of the most nutrient rich grains available. It is a good source of iron and B vitamins for energy, calcium and magnesium for healthy bones and nervous system function, and vitamin E which is a powerful antioxidant.
Quinoa contains more protein than any other grain, with a good balance of all 8 essential amino acids, making it a good choice for vegetarians.
Quinoa is also high in fibre and has a low GI, which means that it is great for keeping blood sugar levels stable. Quinoa is therefore an ideal grain for people with diabetes, but also for people wanting to lose weight
There are three main varieties of quinoa available, white, red and black. Quinoa has a fluffy consistency, with a slight nutty flavour.
You can use quinoa similar to how you use rice. Cooked then cooled quinoa is nice in a salad, or it is delicious hot served with a stir-fry, curry, stew or casserole. Also try adding quinoa to frittatas or vegie patties.
Qunioa flour can be used for baking gluten-free breads, cakes, muffins, cookies and pancakes.
